The Val di Rabbi offers the chance to take an authentic culinary journey: local produce made from the milk of the cows who graze around the dairies, along with cured meat, soft fruit and syrups made with mountain herbs. But you can also get a taste of the Val di Rabbi by eating lunch, dinner or just a snack in one of the many eateries in the region.
The culinary journey through the Val di Rabbi begins with lunch or dinner in a mountain dairy or a restaurant. These eateries serve traditional dishes, prepared with love using locally sourced ingredients. A journey through the tastes and flavours which the distinctive environment of the high-altitude dairies can serve up, with products produced on site using the milk of the cows grazing on these pastures.
After having tasted the traditional dishes in the dairies and restaurants, the culinary journey continues with the purchase of some local produce made in the valley. A great idea for a souvenir of the Val di Rabbi or for gifts for friends and families.
The cows roaming freely on the pastures, in the fields, their milk collected and processed right there in the dairy... This is how our traditional cheeses are created. The undisputed queen of local cheese is Casolet, a soft cheese made with unpasteurized milk. Casolet and other traditional cheeses can be purchased in the dairy during summer or from the creameries and farms that produce cheese themselves.
The traditional food of the Val di Rabbi is authentic, simple and very tasty. Whilst no table is complete without a serving of cheese, there is plenty more to enjoy. Our cured meats are just as delicious. Speck, salami, sausage meat or pancetta? What more could you want! In the Val di Rabbi, our cured meats are locally sourced from the farms in the valley and can be purchased from farms which make their own or from butcher’s shops.
Herbs grown and picked in the mountains, syrups and infusions made using mountain herbs, full of goodness!
