Along with the daiaries that still exist in the villages, moutain huts are the symbols of the ancient diary tradition. Even today, in the summer months, farmers and sheperds take tehir cattle to the high pastures of the mountain huts. A delicious milk is produced thanks to the genuine grass, the healty waters of streams and the unpolluted environment. With this important ingredient, cheesemakers make the typical products of Val di Rabbi: ricotta, butter and cheese, including the soft Casolet.
In addition to their traditional essence, many moutains huts nowadays have become area for refreshment after moutain excursions.
In order to connect more than twenty mountain hust, “L’antica via delle malghe” (the ancient road of moutain huts) was created: it is a brand-new hiking route which is based on a circular pattern and encompasses the whole Val di Rabbi. The route is divided into several stages, connecting the various patures and offering accommodation facilities that provide services such as tasting and sale of local products, food service but also high-altitude overnight stay in some cases.
